Shrimp Tostadas are simple and fun to make. A slight change from a traditional Taco Night meal. Add these tasty and crispy shrimp tostadas with a little Pico de Gallo to your menu and watch them become a regular item in your household.

What ingredients will I need for this recipe?

Shrimp: Main Protein for this dish, 1 lb. of Jumbo or Large Raw Shrimp
Corn tortillas: The base of the tostada, corn tortillas are best because they are crispy and firm for other ingredients
Refried black beans: Can refried beans will work well for this dish
Onion: The flavor from the onion will pair well with the other vegetables and shrimp.
Bell peppers (Red/Green): The sweet red  and green bell peppers will sweetness and texture and flavor to the dish
Seasoning: Will add to shrimp and veggies, salt garlic powder, onion powder, ground cumin, smoked paprika, chili powder, oregano or regular oregano
Cooking Oils: Vegetable or canola oil for frying corn tortillas and Olive oil to saute'
Queso fresco:  Mexican cheese to add on top of tostada
Guacamole: Condiment for Tostada, can be bought or made
Pico de Gallo: 
Condiment for Tostada, can be bought or made

How to make Shrimp Tostadas?

Rinse veggies and pat them dry.  Slice onion and peppers and set aside. Next, combine all seasonings in a bowl for later. 

Clean Jumbo or Large Shrimp. Peel and remove shells and devein shrimp. Rinse and pat completely dry and set aside in a bowl.  Add seasonings to shrimp and coat well.
Add olive oil to a large skillet over medium heat and sauté onions and peppers for 2-3 minutes and remove. They should still a slight bite to them.

Add more olive oil to the same skillet and add shrimp and cook for 3-4 minutes on each side. Shrimp should be opaque and then remove from skillet.
For the beans, heat up refried beans in a small pot. If needed, add seasonings for more flavor.
Now, its' time for the crispy shells. In a large skillet add 1/2-inch oil to pan and heat to approximately 350-360 degrees. Add one corn tortilla in oil and fry for 30-seconds per side. Set on a paper towel to drain. Repeat for every tortilla.
Let's build these Shrimp Tostadas!  
Place one crispy tortilla shell on a plate or platter. Spread about 1 tbsp. of refried black beans over each shell, add guacamole on top of beans.
Next, sprinkle queso fresco.  Add onions and peppers. Add Shrimp, more queso fresco cheese, Pico de Gallo and additional cheese and chopped green onion or cilantro.
